Just over a decade ago, in 2010-11, India imported nearly 8,000 tonnes of frozen fries. By 2023-24, imports dropped to zero, and the country exported an impressive 135,877 tonnes of french fries, showcasing a dramatic shift in its agricultural and processing capabilities.

This growth is largely attributed to the strategic partnerships between major food processors and local farmers. Companies like HyFun Foods and McCain Foods have established a strong presence, particularly in Gujarat, which has become the epicenter of India's french fry production. Their efforts to procure potatoes directly from growers have not only boosted export numbers but also enhanced farmer livelihoods through contract farming models.

Innovation and Sustainability in Potato Farming

The surge in french fry exports has driven significant innovation on Indian potato farms. Farmers, especially in Gujarat's Banaskantha region, have adopted advanced agricultural practices to cultivate high-quality, chip-grade potatoes suited for processing. Over the past two decades, Gujarat's production of processed potatoes has increased tenfold, fueled by fertile soil and cutting-edge farming techniques.

Food processors like Iscon Balaji Foods have taken a proactive role in promoting sustainability. They've initiated extensive farmer training programs to share best practices, ensuring a sustainable supply chain. Additionally, companies such as HyFun Foods are investing in new processing plants to cater to both domestic and international markets, with 70% of their current revenue stemming from exports.

Gujarat's Role as the French Fry Capital

Gujarat stands out as India's leader in processed potato production, supporting both french fry and wafer exports worldwide. The state is home to massive factories operated by global giants like McCain Foods and local leaders like HyFun Foods. These facilities are backed by advanced cold-chain systems that maintain product quality from farm to global markets.

Recent developments, such as the inauguration of Falcon Agrifriz Food's frozen potato processing unit in Mehsana, Gujarat, highlight the state's growing importance. With an investment of over 1,050 crore rupees and a fully automated production line, this facility underscores the region's capacity to meet rising global demand. As India continues to expand its footprint in the french fry market, Gujarat remains at the forefront of this spud-tacular revolution.
